This recipe is quick, easy to make and absolutely delicious.
2 tbsp olive oil
1 onion, finely chopped
1 clove garlic, crushed
2 cups/440g diced tomatoes
Salt and pepper to taste
1 bay leaf
1/4 tsp dried basil
2 tbsp fine chopped fresh parsley
500g fresh white fish fillets of your choice
Heat the oil in a wide-based frying pan and sauté the onions for three minutes.
Add the garlic and sauté for one minute more.
Stir in the diced tomatoes, salt and pepper, bay leaf, basil and parsley. Bring to the boil, reduce heat to simmer.
Add the fish fillets and spoon some of the sauce over the fish. Cover and simmer for 15-20 minutes, adding a little water if needed.
Cook until fish flakes when tested.
Serve hot with vegetables of your choice or on it’s own with fresh crusty bread.
