This popular dish is a quick and easy way to cook fresh green beans.
Green Beans in Oil (Fasulye Zeytinyağlı)
3 cups/750g fresh green beans
1/4 cup/60ml olive oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
1 cup/240ml water
2 cups/420g diced tomatoes
1 tbsp tomato paste
1 tsp sugar
1/2 tsp salt
Freshly ground black pepper to taste
2 tbsp finely chopped parsley
Wash beans, trim stalks and tips and cut in half.
Heat oil in a saucepan, lightly fry the onion until soft.
Add garlic and fry for a few more seconds.
Add water and bring to the boil for five minutes.
Stir in the diced tomatoes, tomato paste, sugar, seasoning and parsley.
Reduce heat and simmer for 30-35 minutes until the beans are very tender.
Serve hot with crusty bread and white/feta cheese. May also be served cold with a squeeze of lemon juice.
