Fasulye Piyaz (White Bean Salad) is a healthy, easy to make dish packed with flavors and protein. Usually served as part of a meze selection, it also makes a great light lunch in the warmer weather.
Fasulye Piyazı (White Bean Salad)
250 gr. white beans
1 glass* vinegar
1 large onion
1 dozen black olives
1/2 bunch parsley
3 hard boiled eggs
2 teaspoons salt
1/3 glass* olive oil
*1 glass = 25 cl.
Soak the beans in water overnight
Bring a pan of water to the boil. Drain the beans and add to the boiling water. Cook on medium heat until they are tender.
Drain and put the beans in a bowl.
Sprinkle with some of the salt and pour over 3/4 glass of vinegar. Leave for 2-3 hours.
Slice the onions lengthwise. Put them in a bowl and rub with salt to extract the juice. Wash and drain.
Drain the beans. Add the onions and chopped parsley. Mix well and arrange on a serving dish.
Cut the peppers into thin slices. Peel the tomatoes and cut into pieces. Cut the hard boiled eggs into quarters.
Decorate the beans with the peppers, tomatoes, eggs and olives.
Mix the olive oil, salt and the rest of the vinegar. Pour over the beans.
