Try this is a quick, simple and delicious recipe for tomato soup
6 large ripe tomatoes
500ml chicken or meat stock
I tablespoon butter
Salt to taste (optional)
Grated cheese to garnish (Cheddar or Kaşar depending on where you live)
Wash the tomatoes and place in a pan.
Fill with the broth and boil until the tomatoes soften and the skin starts to loosen.
Mash and strain – the skin of the tomatoes should stay in the strainer.
Melt the butter in another pan, add the flour and mix to a smooth paste.
Slowly add the strained tomato juice and mix over a low heat until the liquid thickens. If it is too thick for your taste, dilute with more broth.
Add salt to taste (optional)
Garnish with grated cheese and serve with hot crusty bread.
For a chunkier version add skinned, fresh tomato cubes
