This is a delightfully light and fluffy sponge pudding, which can have any jam you choose, or, if you are lucky enough to have some, golden syrup oozing down the sides.

Sponge Pudding

It takes only 4 minutes to microwave.  There is sufficient for 4 man-sized portions!!

(If you don’t have a microwave it can be steamed in a large saucepan for 1½/2 hours, remembering not to let the saucepan boil dry!)


  • 50gms/2oz margarine
  • 50gms/2oz caster sugar  (whizz granulated in a blender)
  • 1 egg
  • 100gms/4oz self raising flour (or 4oz plain flour + 2 teaspoons baking powder)
  • 4 tablespoons milk approx (to give a sloppy dough)
  • 4 tablespoons of jam or golden syrup


Cream margarine and sugar until light and fluffy.  Add the egg and mix thoroughly.  Gradually add the flour and mix until smooth.  Add the milk and beat to give a sloppy mixture.

Spoon the jam (or golden syrup) into the base of a greased 600 ml/1 pint plastic pudding basin, cover with the dough mix and microwave on high for 4 minutes.  (Or cover with greaseproof paper and a cloth and steam for 1½-2 hours).  Leave to stand for 1 minute (if you can wait that long!!) then turn out onto a warmed dish and serve.  Mmmm.
